Thanksgiving Recipe – Stuffed Jalapeños

Ingredients:
40 medium to large sized jalapenos
2 lbs of Jimmy Dean Pork Sausage
2 packages of Philadelphia Cream Cheese
2 cups of fresh shredded parmesan cheese
1 package of non-latex gloves

Recipe:
Cut each jalapeno in half
Using a spoon, scrape out the veins and seeds
Rinse the jalapenos

In a frying pan, brown 2 lbs of Jimmy Dean Pork Sausage
Drain the grease
In a mixing bowl, mix the sausage and the cream cheese together
After thoroughly mixed, add the shredded parmesan cheese and mix well

Scoop a teaspoon of the mixture into each half of the jalapenos
Put in a casserole dish (not a cookie sheet because the pork sausage will continue to drain)
Bake for 20 minutes at 450 degrees

Tips/Variations – Better with smaller batches
Wrap each in bacon and bake
Wrap each in crescent roll dough and bake
Leave in some of the seeds/veins to make it hot

Thanksgiving Recipe – Stuffed Jalapeño Casserole

Ingredients:
1 large cans of sliced jalapenos
2lbs of HEB – Hot Turkey Sausage (found near Jimmy Dean Pork Sausage packages)
2packages of Philadelphia 1/3 fat Philadelphia Cream Cheese
1cups of fresh shredded parmesan cheese
1 cup of fresh basil
1 cup of chopped onions
1bags of frozen tater-tots

Recipe:
In a frying pan, brown 2 lbs of HEB Hot Turkey Sausage
Drain the grease
In a mixing bowl, mix the cooked turkey sausage and the cream cheese together
Add the cup of fresh basil, chopped onions, and parmesan cheese – Mix well.

Add a single layer of tater tots at the bottom of a casserole dish.
Top the layer with the jalapeno/cheese mixture
Cover with aluminum foil and bake for 45 minutes at 425 degrees.

Thanksgiving Recipe – Brine Turkey

5 gallon bucket  –  Fill half way, enough to submerge the Turkey

Brine:
Small bunch of fresh parsley
Small bunch of fresh sage leaves
4 fresh bay leaves
1 tablespoon dried thyme
¼ cup whole black peppercorns
1 cup Kosher salt

Add all ingredients to bucket and stir until salt dissolves.

Place turkey into brine, place in refrigerator overnight, I usually do a full 24 hour.
Remove turkey from brine and let sit at room temperature for 30 minutes

Then stuff turkey with:
1 onion, quartered
2 celery stalks, chopped
Small bunch of fresh parsley
Small bunch of fresh sage leaves
One bay leaf

Brush turkey with 1 stick of melted butter 

Season with:
1 tablespoon dried marjoram, thyme, and sage – combine in dish and season turkey

Cooking (Roast 15-17 minutes per pound):
Baste turkey every 15 minutes.
Preheat oven at 425*
Roast breast side down for 40 minutes
Turn breast side up and lower oven to 325*
Let turkey rest for 20 minutes before carving.

If your turkey doesn’t taste like the best one you ever had, you failed somewhere!

Transformation 55 – Day 20 of 55

This morning, I finally hit the 30 lbs weight loss. Another 5 pounds and I will weigh less than I did five years ago. It takes the time to undo bad habits, but I am on my way to better health.

Total weight loss on Transformation55 is now 8 lbs.

Today, I began a Transformation. I’ve already lost 22  lbs. It is now time for me to add some physical exercise to it.

MNS 3 – What does it look like?

My mother, also an Independent AdvoCare Distributor, asked about the Metabolic Nutrition System (MNS) that I am taking as part of my 24 Day Challenge. I thought it would be good if I take a photo and provide a little more information on how I take it.

There are three different types of MNS.
1.) MNS 3 – Provides a foundation level of appetite control and energy (this is the one that I use – it is the one that I will describe)
2.) MNS C – Provides a higher level of appetite control than MNS3
3.) MNS E – Provides more energy than MNS3

I’ve been using MNS3 for a little more than a month now. It provides me with sustained energy, appetite control, core nutrition, and overall wellness.
